Which Lipids to Choose?

You've probably heard of "good" and "bad" fats. The reality is a little more complicated, but it is not very far.

Let us analyze more closely the standard classification of lipids into harmful fats, "bad" fats, neutral fats, and "good" fats.

Harmful Fats

These are "trans" fatty acids and partially hydrogenated oils, produced by industrial processes. Among other things, they are accused of increasing the risk of certain cancers and cardiovascular diseases.

Trans fatty acids are being gradually eliminated from the diet by manufacturers in the face of the danger they represent, and these fat are already banned or severely limited in certain American states or Denmark, for example.

The "Bad" Fats

These are saturated fatty acids (or AGS). These fat are said to be "bad" by abuse of language because they have long been held responsible for various pathologies (cardiovascular diseases, cholesterol, etc.). Still, in reality, this notion must be qualified.

In the first place, our body needs a certain amount per day: it is therefore above all not a question of eliminating them, but of not abusing them. Indeed, consumed in excess, they could have harmful effects on the body (resistance to insulin, reduction in the use of fats to provide energy, etc.).

But above all, AGS represent a very heterogeneous set of molecules (comprising from 1 to 32 carbon atoms): they are therefore not all equivalent, nor should they be put in the same basket.

Neutral Fats

These are monounsaturated fatty acids. These are those mostly contained in olive oil or macadamia, in the form of their main representative: oleic acid (a type of "omega-9"). They are generally considered to be beneficial for health (especially olive oil).

The "Good" Fats

These are polyunsaturated fatty acids. In addition to direct beneficial effects on our health, these fats are said to be "essential" because the body needs them. Our organism does not know how to manufacture or replace them, they must imperatively be provided by food, and any deficiency can have serious consequences.
